I read on other forums that people are using blanking plates to block the EGR, with depending on the car a re-map.
Would our 6G7X motors benefit from this?

Not at all, is an age old myth that blanking the EGR will give you all this extra power. Bit like fitting a K&N to a Magna will give you another 20 RWKW
If you really must, all TE and TF have these on the inlet manifold as they did not run EGR however the ports were still there. Is a waste of time and also illegal to remove anti pollution devices

Yea no need on petrol engines, EGR is really an issue on diesels, just pent $700 on my Triton getting inlet manifolds taken on of and cleaned from carbon deposits (car would would run like a pig), blocked it off now.

EGR in petrol engines has positives and negatives, such as:
+ reduced combustion temps -> reduced NOx emissions
+ reduced pumping losses at low throttle openings -> better part throttle efficiency
+ can reduce warm-up times in cold weather
- increased piston top temps -> in marginal tunes [i.e. custom not factory] this can lead to pre-ignition
Just blanking the EGR off is actually potentially dangerous as the ECU advances the ignition timing in certain parts of the map when it believes EGR is active (AFAICT advance is up to 9 degrees in a 6G74 ECU); if EGR is not actually operating when it does this there is the potential for problematic ignition (leading to "knock").
If you really want it off, its much better done in the ECU as part of a tune...

Blanking off EGR to get the engine running better is Old News. Not needed on modern cars.
Last time I did this was on a Holden 202 red motor 20 odd years ago, but only because it kept burning exhaust valves on a decent run. Nothing worse than leaving home on 6 cylinders and arriving back 800 km later with it running on just 2 cylinders. lol
