20's are perfectly legal on 380's.. According to the RTA you are allowed 26mm wider and 15mm larger then the standard wheel tyre combo.. So 235/35/20 is only 4mm larger then the 215/55/17 gt wheel and tyres

20's is definitely the way to go on a 380 ;) Both my 380's are running 245/35/20. Rolling diameter is almost the same as the 215/55/17 standard wheels...

245's are too wide for the 380's, legally that is.. You are only allowed 26mm wider then factory.. Or do the 380's go to 225 tyres on some models?

I looked at the RTA website and that's not quite true. You can only go for a wheel that is up to 26mm wider than factory without notifying the RTA. There is no mention of the widest tyre that you can fit - my take is that as long as it's within the correct overall diameter and doesn't foul on anything, you'll be sweet.
Given their price/range as well as the extra sidewall it offers, I would be going for 245/35/20 if I had 20" wheels on a 380.
This then presents a problem as most 20" wheels are 8.5" wide, which is 1.5" wider than the widest OEM 380 wheel. So if you wanted to maintain 100% legality, you couldn't go 20x8.5" regardless of tyre choice.
Practically speaking though you are unlikely to ruffle any feathers as long as your wheels/tyres remain in the guards.

Yeah that's where I got the info from, the problem is the same here with vic roads, they lay out these rules but are very vague on them so one person can interpret them completely different to another.. My definition on wheel is rim and tyre, to someone else it could be just the rim or tyre.. Long story short, 20's are legal, as to the width and diamiter you will have to check for 100% confirmation

What is the ride like on 20's? What about suspension clearance? Do they hit/rub when the suspension collapses?

If you haven't changed the suspension yet (ie lowered springs) the 20s won't hit or rub anything, will be plenty of clearance. (Car will look like a 4wd though...)

I had 16s then 17s then 18s then 19s then 20s then 17s then 19s on my 380, and the sweet spot was the 19s.
Yep, the 20s looked great, but they rode hard and half decent 20" tyres are not cheap.
19s didn't look quite as good, but they rode much better, the rims & rubber are both considerably cheaper than 20s, and you have a much wider choice.
As Red says, best tyre size on 19s for looks, grip and clearance is 245/35R19. That size fitted no worries for me, even on Kings Lows at the rear and Super Lows at the front.

I ran mine on King Super Lows all round for years till I fitted the coil overs. There was no scrubbing on the super lows, rear guards were rolled as a precaution. Once the coil overs were fitted it went lower again and that's when the scrubbing started but in the front only.A quick adjustment from soft to firm stopped the majority of the scrubbing but it still scrubbed on the bigger bumps, front guards were pumped and now it doesn't scrub at all :)
They do ride firmer on 20's yes but I don't notice the difference anymore, it's been a few years since I ran the standard wheels. Even with the coil overs it feels more planted and handles like its on rails in comparison to the lowered springs.

.
Not quite. The Tyre and Rim standards limit how wide \---/ or narrow a /---\ a tyre can be on a given rim width size
http://www.tyreandrim.org.au/
So some rim diameter and width (eg plus 26 mm of standard) combinations may limit choice of tyre size and put you outside the 15mm overall diameter change allowed in NSW

I only had a quick squiz on that website but it looked to me more like an industry association's recommendations rather than a legally enforceable modification guide.

To comply with adr's the overall circumference must be no more than 7% compared to what is standard on your car.

Yes. I grew up in Adelaide and SA rules a bit more prescriptive:
