Hi guys,
I want to use 225/55/16 tyres as the Michelin PS3 comes in that size.
Would these be ok an a 6.5" rim?
Ideally they would be on a 7-7.5" rim, but I am having a hard time finding 16X7 rims that look factory and do not stand out at all.
I know the TW AWD came with 16X7 but these are quite rare.
Are there any other car makes that have 16X7 rims with correct offset and center bore?

Yes, as you are aware they will fit though may perform better on wider rims. There have been a couple of forum members who have had 225/55 on 16x6.
I have 225/60 on standard 16x6 rims, an unusual combination I know. I have some slight rubbing issues inside the tire at full lock on uneven ground. However this may not be an issue with 225/55, I have not heard others complaining.
If you do go for aftermarket wheels rather than the OEM suggestions from others, pay some attention to offsets. My OEM rims are 46 offset and an offset of, say, 40 would probably solve my rubbing issues.

Are all 380 16" wheels 7" wide?
They are a consideration but I am not a fan of how they look. They look like alloys from the early 90s.
The TJ Sports rims are too ridiculous of a design IMHO.
I really like the CJ Lancer 16" wheels but they are only 6.5" wide.

Gto aka 3000gt rims....16 x 7.5 offset +46 I think, or maybe +40.
All mitsubishi specs obviously.

380 16" wheels are 6.5" wide.
I've got a Bridgestone brochure which shows that 225/50R16 tyres can be fitted on rims from 6" to 8"
It doesn't show 225/55 but the same would apply.
So 6.5" would be "ok"; 7" would good & 7.5" would be better if you were more concerned about handling than ride comfort.

Now I am undecided whether to go for 215/60/16 tyres of 225/55/16.
The latter is a size that the Michelin PS3 come in hence the consideration

They are +46 and 16X6.5"
So same as the stock 16" 3rd gen wheels but with 1/2" more width

I understand your dilemma - 215/60 would be a better fit but most manufacturers don't make their best tyres in higher than 55 profile.
Why not try your old 215/60 tyres on the new rims first & see if you notice an improvement in handling. That might save you the significantly higher cost (I suspect) of quality 225/55 tyres. Besides, I be interested in hearing what changes you noticed.

To be fair I doubt I would notice any change from half an inch wider wheels, but either way my tyres are near end of life so it's not worth the hassle.
I think I will just go for the Pirelli P7 Cinturato. They are well rated and I prefer a more comfortable tyre, plus it's $200 cheaper for a set of 4

Sounds a good decision - if you'd fitted the wider tyres you might have ended up wishing you'd bought wider rims to better suit.
Only thing with not trying the old tyres on the new rims is that we won't know whether the changes you notice are due to the new tyres or the wider rims.
They should look a better fit (less baggy) - even after you've adjusted the pressures down to normal.

The CJ Lancer rims suit the Verada really well actually. I will try to take some pics over the weekend and post them up

Similar in the sense that they are both 10 spoke, but considerably different in design.
In my opinion they make the car look more elegant in a subtle way
