i want to get one of those plastic engine covers, will one from a 3.5ltr fit onto a 3ltr?

Not only that but, I have seen several pictures of the plastic cover done up in different colors. Are those sold in Aus like that or can they be painted without too much hassle??

Different coloured engine covers have been personally modfied by their owners. Not having done it myself - I imagine it is a simple case of painting with a 'fairly' heat resistant enamel type paint. If you're buying one to fit to a car that doesn't come with one standard - even easier.... paint it before you put it on, just leave it off long enough to cure properly.
