If you have only power and ground, then you certainly do not want to hook it up constantly to +12V and ground, you will drain your battery flat in no time.
You have a couple of options... From most difficult to least difficult.
1) Open the amps up, find the power pin of the switchmode IC, and cut the track, solder a power wire to this - the power supply will not work until power is applied.
2) Use a relay driven from the switch lead - only problem is that the output of most of the switch leads is 100ma (0.1A) tops, you could get very close to that with some relays - I would suggest a MOSFET to do the switching duties, or use a transistor to do the duty of switching the relay (or a darlington pair if you are paranoid)
3) Run the amplifier off a relay driven by the ignition. Not sure of the current requirements of your amp, but you may even be able to run it off the ignition wire direct.

From what I have heard, those Carrozzeria lineup of devices are very complex systems, and a missing remote power lead would probably mean the amp is also digitally controlled by a secondary controller, a very similar system to the McIntosh system in the new Mini's.
Are there any other switches/knobs or strange looking connectors (onces you dont normally see on a amp)?
If the above is not the case, then use a horn relay to create your own remote switching. Just don't power the amp directly from the remote wire from the headunit since the current is definitely not sufficient.

I'd go with relay off accessories position.
You may want to also install a switch to control it.

Correct me if I'm wrong, but aren't there some amps that activate when they detect a signal?

umm, personally i know of a lot of people here in adelaide that have had trouble  with autobarn's dodgy installations, especially down south. i would reccomend tonkins or a similar place instead.
