I wanna get a roof mounted flip down monitor for the backseat passengers but i'm not sure how to connect it all up so the ps2 plays the movies and games but the sound comes from my stereo. To do this will I need 2x in/out RCA and the 1 video RCA ? Or is it as simple as audio RCA's to the H/U and Video to the monitor?

IF u are only senfding audio signals to your headunit then you will only need the red and white rcas from ur ps2 av cable.

Send video to screen = yellow rca
Send audio to headunit = red/whit rca.

Your headunit will need an aux in. may be at the back of the headunit, may also be able to buy adapter to change cd stacker input to rca.

Worst case fm modulator.

What headunit?

Wiring up the screen just needs power, accesories and ground for most simple screens anyway.

Peace

I have a JVC KDG615 H/U. It has the needed RCA in and out. How would I connect the accesories wire? does it have to go down to where the headunit's one is?

Just splice into the headunit remote out wire.
