i am thinking of some major engine mods
1) turbo, with the turbo sigma gsr exhaust manifold , haltek ek6?, with stage 2 cam & port and polished head, no quads or
2) stage 2 cam, haltek ek6?, quad throttle bodies,port and polished head & extractors

i don't really want to turbo due to insurance and my need to go faster(MMOORREE BBOOOOOOOOOSSTT bang! ahh s@#t, here we go again!)and my lack of points(and cost) give me some thoughts

Well if you dont really want to turbo, then go for the 2nd option.

You wont get the 3.5 in there.

But you could mod a sohc 3.0 to have just as much torque down low as the 3.5

A V6 swap, IF the engine mounts are the same (Im not sure) would be fairly cheap, say about 1k or so for the new motor and it'd be easy putting it in if it's a bolt in.

If it's not a bolt in then you have to get new engine mounts and an engineer's cert and then it becomes expensive.
