your cooling fans probably arent starting up when your car gets to temperature.....when your turn on your aircon it starts up both cooling fans, which in turn cools your car down.

Absolutely nothing to do with you having your window up or down.

Temp sensors are thermoresistors, so perhaps when there is more current drawn from the electrical system it drops voltage and your sensor reads low/high depending on the sensor type.

Check your thermo is working anyway, back flush your radiator and put some tap water and a rust inhibitor in, i use the castrol stuff which comes in a while tin for around 4 dollars concentrated.

Yeaa.. like samurai said. The fans are switched On whenever the aircon is on, regardless of how hot or cold the water temp is.
so thats why its cooling down with the air con on.

If its heating up and the fans arent switching one, it means the thermostat might be blocked or something. Would be worth replacing and yea like TC said, do a flush.

had similar cooling problems and that fixed it.

the flush like i explained is a long shot, its probably worth the 80 bucks for a complete professional flush
