hi if i have a dual coil sub would it be better for me to wire the sub in 2 channel or 1 channel??

Their is no simple answer to your question.
First of all, what kind of amp will you be running this sub with? mono block/ 2channel / 4 channel amp?
Second, what are the coils impedance? ( 2 or 4 ohm... maybe even 6 ohm )
Third, what are you after, SQ or SPL?

i have a JL W3 12" and its dual 4 ohm, which i wired parallel (i think) and bridged two channels (i think) on my 4 channel alpine amp

You should always wire DVC subs with both coils in parallel or series on the same channel, otherwise you may have issues with a slightly different signal/level reaching each coil.
