I know theres lots of threads about air con q's but nothing relates to my problem.
I had my air con regassed before I bought it and it seemed to be cold, but on a day about 28+ the air doesnt cool down at all.
I was told that the air con thermostat might need adjusting.
Can someone tell me where this is and how to adjust it please? It gets pretty warm in my car when theres no cool air to cool it down :)

shouldnt cost you more than $99 to have your A/C regassed.
Just about any place can do it.

Since A/ you have manual control Aircon yes (?) and B/ someone's clearly been at the radio setup judging by your profile, I suggest its probably a strained cable to your fresh air intake. On the manual aircons this cable can be moved out of position when the radio is removed and or installed, therefore not blocking off the inflow of outside air properly, therefore not letting the aircon cool the cabin properly.
Its easy to check. Remove air tray under the glovebox (three plastic 'Christmas Tree' studs) remove glovebox (two screw bolts at hinge), remove glovebox frame (two bolts and I think 4 screws including the top mounted catch. Carefully remove the frame being aware of wiring fitted to the inside face of it - unclip this wiring. If you have an airbag above the glovebox (yellow wire sheathing), unclip the whole wiring mount for this and push it back through the lining, don't break that wire at its joining clip.
Now you can see running horizontally a cable that controls fresh air intake - moving the Fresh / Recirc slide control will show it in action. Make sure this cable is adjusted on its mounting clip to allow maximum movement to the LEFT as that's the position that shuts off outside air. Move the control a few times to check range of movement, adjust again if needs be, then refit the glovebox.

My air refresh/circ is working fine, the one next to the vent isn't working, but I think its stuck on refresh.

I had the same problem after re-gassing and it turned out my thermostatic fan was kaput... I had no idea but I will tell you one thing, I hope it's not that as an original one apparently costs over $450... I was lucky enough to get a second hand one for around $200.

"My air refresh/circ is working fine, the one next to the vent isn't working, but I think its stuck on refresh."
can you clarify what you're saying here... the one "what" next the vent - the rotary dial that selects where the air goes? Is that what you mean?

May I clarify that is normal if water comes out when you use aircon? I thought it was bad? Just asking? Not expert in this area obviously.
