So I had it perfect on 3 coats, but oh no, I decoded to paint that one extra coat... and BAM, 3 drips appear when I am not looking!
How do I get rid of the drips? Should I wait for it to dry then just sand the whole thing back and do another coat? Or should I get my fingers wet and fix it now?

just give it a nice gentle sand with some wet wet & dry sandpaper.
400 grit if they are big runs 800 if they are small
Just be gentle and patient, when they are nearly gone finish with some 1500 grit
Dont panic of if looks dull, cut & polish will bring it right back up again.:D

I hit it with some 320 grit (best we have) it was making to many scratches, so I rubbed it againts some other 320 and it was nice and smooth.
Then I put a fresh coat of paint over the top of it, one more and it goes into the oven to bake!
