19s are a great size to go.
i'd get the rims on 1st, then see how much you need to lower it to look pimp. you may need to lower it less or more, but get the rims on 1st.
as for tyre and wheel place, personally i dont like tempe. only ever gone there to see the range and gone elsewhere to purchase, even if they're a little more expensive.
what area in sydney are you in? there are plenty of places around and i can highly recommend a few as well

Sorry, you will only be able to lower it 47mm.
Hope you don't take it too hard.

bet they rub somewhere?
ive got 225/30s on my 20s and they dont rub at all anywhere
Here we go again. As long as the overall diameter is maintained to some percentage (it is
the law) and width to a limit with correct offset, there shouldn't be a problem. You will
have problems if the tyre's outer edges are lined up with the guard (which means you have
the wrong offset, too little offset) and lowering the car that much would cause the tyres
to rub the guards. Flaring the guards (pumping them, aka VE front and rear guards), would
be better than rolling the guards.
Also on 19" rims, my boss' 2006 HSV Grange with stock 19" HSV wheels had one of the rear
wheels crack when going over a speed hump in a shopping centre, and no, he (50+age)
was not speeding. That's the price you pay in going so big, with little cushioning offerred
by the tyres. 19" tyres are not cheap as well, $600+ per corner for decent ones.
