im no expert but i think it has something to do with your strut tops no lining up or put in around the wrong way

Type 40 had noisy spring problems in his 380 which turned out to be coil clash. Not sure if its the same as your problem but the suspension place put some tape along the springs & it fixed it. Check out the thread titled 'Lowering 380's' in the 380 section...it may help you out.
sounds like the springs are not indexed properly. Have a look to see if the spring is sitting as it should in the strut i.e. are the ends of the spring in the little notches. if not you will have to take them out and redo them

Different problem to what type40 had. As mentioned previously Check the bottom of the spring and the top where they are sitting. Odds on they are not lined up properly as mentioned previously. Been there done that.

i had a clunk in my commodore but it wasn't caused by the springs. it was caused by loose torsion bars, or something like that. it was quite a while ago now.

i can tell you from experience the reason the springs are jumping is because the strut top has not been sufficiently lubed up when re-assembled
had this problem the 1 time i installed my kings

rotate the spring top cap or strut top 180 deg so the top is tapering inwards
when tapering outwards the inside rubs on the inner strut tower thus the clunkin noise!!
happen to me aswell!!! hope it helps.
