Hi, did a solid search and came up dry on this.
Does anyone know how hard it would be to turn my single din (+ random tray) in my 2nd gen execs dash into a double din in which i could fit 2 H/U's (respectively) or if it's even possible???

Bit confused what your after, but im pretty sure the 'random tray' is actually another DIN slot. I think orginally on my car once was for a radio and ther other the cd player or stacker. So you do actually have 2 DIN slots, and hence can put 2 things in there.

lol sorry i wasnt quite sure of the words, will take pics of exactly what i mean. However, from my observations, there seem to be only one din the the plastic tray is just apart of the dash mold and fills the gap below the H/U. I'm going to need to cut it out either way cos it's all one peice, i was just wonder how hard it would be to achieve

It's pretty easy dude, you just have to cut out the 'random tray' and you've got a double-din fascia. Every second gen comes with the mounting for a double din unit.
Man, go to pick-a-part and get the fascia out of a Verada, just a standard black double din style one.
For those that don't understand, in the lower model 2nd gens the bottom din is filled with a pocket moulded into the fascia like below, you need a Verada fascia if you want a proper double din one without hacking.
