mounting depth is pretty good, my DD's are pretty big (:bowrofl:) and deep and they fit fine

Stock speakers are 6 or 6.5", so no, you'll need to go custom baffles if you want 8".

To be honest, unless you're a car audio enthusiast like, say, Woob is, I'd be sticking to your conventional 6.5" splits.

*If* mounting depth is an issue with the speakers you purchase, you can always make a basic MDF spacer to attach to the stock baffles.

yeah nah dont bother considering 8's or higher unless youve got some time and knowledge, or money to throw around. else you will end up with a worse result than the 6.5's
