Yes to both.
I did both to my TE manual many gears ago.
Going by not so good memory here, with the gear boot you undo the four screws (one in each corner) that hold the underside plate against the gear boot, remove old, insert new, replace plate and do screws up again. I also used a bit of superglue to get it to hold nice & firm. One last tip - make sure you buy a gear boot with a large 'base' area, otherwise it will be too small to stretch over the rectangular shaped mounting area.

As above. I got a red perf leather jobbie at Super Cheap, which had elasticised base. Was able to stretch that over the four "lugs" of the base frame, where the screws secure the base frame underneath the lower console panel. Better still, if you get the rubber bush out of your old vinyl boot, you can mod that easily into your aftermarket boot - its held in place by a cable-tie.
Aftermarket gear knobs are secured by a variety of means, but I have tried a couple which fitted quite easily. Whereas the OEM ones screw on, one aftermarket knob I tried came with several plastic bushes to place over the gearstick shaft, and knob was secured by three grub screws which dug into the plastic bush...... that worked well. I have gone back to OEM with the selector pattern on it.
