Yep, having issues with one of the things that can cause insanity.

the car starts up fine, but after a few mins of driving it will start to splutter and stall.
I recently did some work on the carb and everything inside is working as it should, Im thinking its going to be a few turns of a screw to fix but I dont want to go changing the wrong thing and making it worse.

maybe the fuel mixture is too rich and is flooding the engine? maybe its too lean and doesnt suck enough fuel after the choke opens?

just wanting to see if anyone has any advice before I go play with it!

possible something small

like a vacume leak or the two dashpots not holding on

is the choke coming off

Yeah the choke works fine, I have been adjusting the mixture and putting a load on the engine by sticking it in drive and reving the engine with my foot on the brake. Reached a mixture where the car doesnt stall while I do this but its about 3 turns from seat.
Going to test drive it now, glad I have RACQ ultra lol

Runs good now except for a random drop in revs/almost stall upon initial acceleration sometimes. The accelerator pump is working fine and doesn't miss a beat.
Maybe a dashpot adjustment could fix this.

Needle and seat often leak as they get older, dumping extra fuel down the intake. Could be why the car is choking up.

I spent a few hours fine tuning the dashpot, timing, mixture, fast idle and choke plate. now it runs great and feels a lot more like a 2.6 litre!
