Im running a Haltech Interceptor and just wondering if anyone has, or knows if it is possible to get rid of the MAF and run a MAP sensor through the Haltech.

Not through an interceptor. If you go full aftermarket (ie. E6X) then yes it is.

Interceptors are used to alter an existing signal and have limits as to how much they can alter them, standalones on the other hand do not and have limitless tuning possibilities.
