In my family, we have a Verada AWD with the K Sport coilovers installed. My brother is complaining they are too low and too hard for him. Does anyone know how to adjust them and if they can be adjusted for height too?

Being coilovers, they should be height adjustable. You could turn down the dampener setting to soft, but this will give the car a tendency to bounce. You may need to sell the coilies and buy a matched spring/shock combo.
Coilovers can be adjusted for height by turning some locking rings on the shock body. Normally the coil overs come with a couple of keys, which are really just spanners for these locking rings.
The harshness could be due to either the spring rate or shock(dampener) pressure. Increasing the ride height will give more travel and might soften the ride enough.
I don't know if these shocks have adjustable dampeners, but you can probably order replacement springs for it.
Warning: adjusting coilovers yourself could result in unbalanced handling - it is best to get them adjusted by a professional with scales to measure corner weights, but that might be a little expensive.
I do not know if it would be good enough but I would probably try adjusting it myself, being careful to make identical adjustments on each side.

Ksport coilovers dont have the adjustable rings from what ive been told. You need to undo the bottom of the coilover and wind the whole strut base to adjust height.

^ yep this is correct, they do have adjustable rings but they are just to preload the spring.

you could just swap them for a set of lowered springs and struts maybe :D
