Anywhere between 45 and 35 will fit. 35 may stick out a little without flares

What do you mean by "dish"? Do you mean the amount of rim shown before the spokes touch the curve of the rim? This is completely in the manufacturing of the wheel and is usually only in Low offset / wheels that are 9inch + in width.

dish isnt something you buy, its a factor of rim width offset and style. Ive got 60mm dish on some 8inch wheels on my 2nd gen. They are +35offset and are flush with the gaurds on the front and about 5mm gaurd clearance on the back. If i sent +30 offset the front would be illegal and the backs would probably touch on the inside of the wheel arch. The same style of rim can be had with a +45 offset and still fit the car with the same amount of dish as it still clears the brakes.
find a tyre place that is willing to try out a few different offsets and combos of the style you want. Ultatmely you cant add dish to a a wheel but you can alter offset slightly by shaving the inside of the hub of the rim (legally)
Of course you can add dish to a wheel just not single piece non steel wheels.
