Sure ,the steering wheel controls wont work...not that i use them much at all to be honest,so that isn't an issue.

Will any third gen airbag be suitable ?

Air bag plug is different so youd have to swap the plug? Like mal did with his 380 wheel onto the wagon.

The CJ lancer wheel or outlander would be better looking IMO

Answer is yes will fit, you can do exactly as Rush has stated and change plugs, to this end you will need the Magna Clock Spring to sacrifice for the plug and a little loom, make damn sure you use heat shrink and then perhaps a second layer as well to keep these wires insulated because if they short your bag will not work and you will get SRS error codes

Do you think this would be difficult or pretty straight forward as I do think the 380 wheel is a bit big for my liking...thinking the cj lancer steerer is a bit more the diameter i like...
